- 1 slice white bread
- 1 teaspoon butter
- 9 slices cucumber
- 50 g/2 oz cooked chicken,boned and skinned
- 1 tablespoon mayonnaise
- 1 teaspoon concentrated tomato puree generous pinch of paprika
- 1 teaspoon cress
- 1 peeled cooked prawn
Lightly toast the bread on both sides and then butter.Arrange the cucumber slices on the bread.
Chop the cooked chicken very finely and mix with the mayonnaise, tomato puree and paprika. Spread the chicken in mayonnaise over the cucumber and top with the cress and the prawn.
